There is just nothing like a crisp, cold margarita to sip on while enjoying a Mexican meal. Both sweet and tart, this bevvy contrasts in the most beautiful way with the flavors and spices of Mexican cuisine.
But who am I kidding?
I like a margarita even without an awesome taco salad or my family’s favorite carnitas!
I created this Prosecco Margaritas recipe in big-batch cocktail form. Measuring is done ahead of time, so all you have to do is divide the margarita mixture amongst glasses when your friends arrive. Then top it off with chilled bubbles of Prosecco, and sit back and enjoy. It is PERFECT for entertaining!
By the end of April, our yard is usually dotted with color here and there, with fall-planted bulbs flowering in full force. But this spring has been a very different (and rather difficult!) kind of year, with a full-on blizzard in April and temperatures barely reaching 60 degrees until just recently.
So I was so happy this weekend to finally see a patch of crocus showing their beautiful little faces!
And soon we’ll see these dainty yellow crocus peeking out, bright and sunshiny (this photo was taken a couple years ago). The girls and I planted these bulbs together a few years ago, and I always look forward to seeing them each spring.
A PROSECCO MARGARITA IS A FUN TWIST ON THE TRADITIONAL MARGARITA
As Cinco de Mayo approaches each spring, I can’t help but get caught up in (more) delicious Mexican food. And the quintessential cocktail of this celebratory Mexican holiday, of course.
I’m an easy one to convince, as I love most anything that combines sweet with tart. But I’m also a fan of that wonderful little bite that tequila offers.
This big batch margarita recipe is a fun twist on the traditional margarita, with a touch of bubbles.
A BIG BATCH MARGARITA RECIPE IS GREAT FOR ENTERTAINING
This big-batch Prosecco margaritas recipes is a great beverage segue into the summer that awaits us, arms opened wide.
If you refrain from entertaining with cocktails because of the measuring and mixing, then this recipe is for you.
BIG BATCH COCKTAILS ARE EASY ON THE HOST
Simply make a batch of simple syrup (super easy instructions included in the recipe below).
Then measure and mix the margarita ingredients, and place the mixture in the refrigerator to chill. Right beside a bottle of Prosecco. Everything should be super chilled prior to mixing the drinks.
Slice a couple limes and place them in the refrigerator as well.
Salt the rims of your glasses and set them aside.
And then go get your party dress on before your guests arrive!

PROSECCO COCKTAILS WERE MADE FOR CELEBRATIONS
This margarita recipe is crisp and refreshing, and goes down smooth and easy. The addition of bubbly Prosecco is a beautiful bonus, an ingredient you won’t find in a traditional margarita.
Bubbles are happy and life-celebrating and so much fun. Please don’t save bottles of bubbly for extra special occasions, like I once did.

INGREDIENTS:
  • 3 oz. blanco tequila, or to taste
  • 3 oz. Cointreau®
  • 4 oz. chilled simple syrup*, or to taste
  • 8 oz. freshly squeezed lime juice, or to taste
  • 1 750-mL bottle chilled Prosecco (preferrably on the sweeter side, such as Dry or Demi-Sec)
  • coarse salt, to rim glasses
  • fresh lime wedges, for garnish
DIRECTIONS:
  1. * Simple syrup is super easy to make, and takes only about 5 minutes! In a medium saucepan over medium-high heat, stir together 1 cup sugar and 1 cup water. Bring to a boil, stirring, until sugar has dissolved. Allow to cool to room temperature, and then store chilled in the refrigerator for up to a month. Use to sweeten any of your favorite beverages. 
  2. In a small to medium-sized jar or bowl, add the tequila, Cointreau, simple syrup, and fresh lime juice. Prepare this mixture at least a couple hours prior to serving the margaritas, and place in refrigerator to chill.
  3. This recipe will make 6 smaller or 4 medium-sized margaritas. Gather 4 to 6 glasses and get started! If salting the rims of your glasses, run the cut edge of a lime wedge around the rim of a glass and dip the rim into a small plate of coarse salt. Repeat with remaining glasses.
  4. Add ice to prepared glasses and divide the tequila mixture amongst the glasses. Top with Prosecco, dividing evenly amongst the glasses. Give a little stir to combine, and then taste test. Adjust for individual tastes by adding more simple syrup for extra sweetness and lime for tartness, plus extra tequila for those who like a bit more tequila bite. Squeeze a lime wedge over the top and add another one to the rim of the glass. Enjoy!
